Mango Salsa


During the month that Dan was doing his 100% raw detox, I created quite a few new recipes.  This was one of them.  The sweetness of the mango goes so well with fresh coriander and tangy tomatoes.  There's nothing more to this recipe than putting the following ingredients in a bowl, stirring well, and then serving right away.  Makes a yummy meal when eaten with organic corn chips, hot refried beans, and a green salad! 

MANGO SALSA
Serves 4 as side dish; 2 as a main 
  • 2 large mangos, peeled and diced into small pieces
  • 2 handfuls ripe cherry tomatoes, quartered 
  • 2 handfuls chopped fresh coriander (cilantro)
  • 1 bunch (about 12) spring onions (green onions), sliced thinly
  • juice of one lemon, or two limes
  • salt and freshly ground black pepper
  • 1-2 mild green chilli peppers, chopped finely 
Keep covered or refrigerated if not eating immediately.
